Banana flower Chutney

Banana flower is nutritionally rich being a greatest source of vitamins, minerals, iron and fibre. Usually it is highly ignored and thrown off! I recommend to use it in cooking where you can produce healthy & tasty items with it such as chutney, stirfry, curry and more. Here is the recipe for chutney!


Preparation time: 15 minutes
Serves: 2-3
Ingredients:
Banana Flower – ½ or 1 small cup (chopped)
Grated fresh coconut – ¼ cup
Tamarind – ½ tsp
Salt – to taste
Red chillis - 2
Oil - 3 tsp
Mustard – 1 tsp
Curry leaves – 1 strand
Garlic – 6-8 cloves (optional)

Method:

  • Remove the outermost cover of banana flower, wash and chop roughly. 
  • Rinse in fresh water once. Cook the chopped banana flower with ¼ cup of water till tender. Allow to cool. 
  • Fry red chillis with few drops of oil until you get nice fried aroma. 
  • Now, grind the cooked banana flower, grated coconut, fried chillis, tamarind and salt together. Transfer this chutney to the serving bowl.
  • Seasoning (Tadka): Peel garlic cloves, crush with a knife. Heat oil in a pan; add mustard seeds, garlic cloves. On spluttering, add curry leaves and season the chutney with this. 
  • Enjoy the healthy chutney with hot rice or chapathi or South Indian breakfast like Idli/ Dosa.
