Ragi Dosey/ Finger millet dosa

There is no doubt Ragi being one of the healthiest grains/ millets. It is proven that this millet is beneficial in managing blood sugar level of the people who are diabetic. This is also nutritionally rich, hence making it a wonderful food option for babies, toddlers and school going kids too.

How about dosa made with such healthy food grain to start your day with? Sharing my recipe of Ragi dosa. Many variations are possible here.

Ragi dosa/ rotti/ mudde are very famous meal options in and around Bangalore, which is local food and loved by every family here.

Ragi Dosey


Preparation time: 10 hours (soaking & fermentation time)

Cooking time: 45 minutes (for making dosa)

Serves: 20 – 24 dosas

Ingredients:

Urad dal – 1 cup

Ragi hittu/finger millet flour – 2 cups

Dosa rice – 1 cup

Fenugreek seeds – 1 tsp

Salt – to taste (1.5 tsp. approx)

Oil & Ghee – for preparing dosa

 

Method:

  • Wash rice, urad dal & fenugreek seeds with clean water and soak in water for minimum 4 hours.
  • When it is done, wash once again, drain water.
  • Take rice, dal & fenugreek (soaked & washed) in a wet mixer jar or grinder. Grind to smooth batter adding required water.
  • Finally, add Ragi flour when the rice and dal batter is almost done. Grind until everything combines & blends together well. Add water as required.
  • Consistency of the batter should be same as that of regular dosa (urad dal & rice dosa).
  • Add salt while grinding.
  • Mix the batter well and keep it covered in a warm place to ferment. It requires minimum 8 – 10 hours. Ideal timing is evening 4 – morning until you make dosas.
  • The batter rises as it ferments, so have enough space in the vessel.

 Making dosas:

  • Heat the iron griddle/ tava. Apply little oil on top.
  • Adjust the consistency to that of plain dosa batter adding water. Take a ladleful of batter and spread on the griddle as you like. That is mini or single large, thin or thick dosa.
  • Cover with the lid and cook. Apply 1 tsp of fresh ghee on dosa, flip to cook other side. It takes approximately 2 minutes to make a dosa.
  • Serve hot dosa with coconut chutney, potato palya/ sambhar.
