To cook dosa
Method:
- In a wide mixing bowl take rava, rice flour and maida.
- If you are using bansi sooji or uppittu rava (not fine), wash & soak in water for 5-10 minutes and grind using a mixer jar just 1-2 rounds. Don't overdo it. Then add rice flour & maida.
- Add curds, salt and about 2 cups of water.
- Combine/ mix everything well using a hand whisk. Make sure there are no lumps.
- Add finely chopped chillis, grated ginger, crushed pepper, cumin, chopped curry leavesand chopped coriander and chopped onion to the batter.
- Add more water and prepare a watery consistency batter. It should be runny.
- Set the batter aside for 10-15 minutes to allow rava to absorb water.
- After 15 minutes, mix the batter well and add some water to make the batter consistency thinner.
- Now heat the iron griddle/ tava.
- Apply oil/ghee on hot tava.
- Carefully pour the dosa batter over very hot tawa like neer dosa.
- Cook the dosa on medium flame until the dosa turns golden.
- Drizzle little ghee on top of the dosa and serve hot dosa with your choice of chutney.
