Ganji saaru/ Rice starch Rasam/ Dwadashi ganji saaru

Hello dear reader, I am writing a simplest & quickest recipe today which can be prepared in no time if the rice starch/ Ganji teli is ready. This is a healthy recipe which is a best option to hydrate oneself which also is a  probiotic drink with added buttermilk. This is a recipe I learnt from my dear friend who is an Ayurvedic doctor, Dr. Soumya Bhat. She contributed to my blog with the Ruthucharya series of posts.  Her recipe was using the starch of white rice, but I also tried with boiled rice starch (Kuchilakki ganji). It tastes equally good.


Ganji saaru or Rice starch Rasam or Dwadashi ganji saaru

This dish is more like tambuli than saaru/ rasam though the name says that.

Let’s jump to the recipe now. This can be made with/ without coconut. I am writing here the version having coconut which can be skipped totally if you are in hurry.

Preparation time: 10 minutes

Cooking time: 5 minutes + rice cooking time

Serves: 2-3

Ingredients:

Ganji/ starch (only liquid drained out of cooked rice) * - 1.5 cups

Fresh Buttermilk – ½ cup

Salt – to taste

Fresh grated coconut – 2 tbsp (optional)

Pepper corns – 10

Cumin seeds – 1 tsp

Green chillies – 1-2

Coconut oil – 1 tsp

Mustard seeds – ½ tsp

Dry red chilli – 1

Curry leaves – 1 sprig

Asafoetida – 1 pinch

 

Method:

  • Drain starch from cooked rice, keep aside.
  •  Take a thick bottomed vessel. Add coconut oil, ½ tsp cumin, mustard seeds, cut dry red chillis & prepare the seasoning. On spluttering add asafoetida/ hing, Slit green chillis and curry leaves.
  • Pour in starch and allow boiling.
  • Meanwhile, grind grated coconut, Remaining ½ tsp cumin seeds, pepper corns . It need not be very smooth.
  • Add this paste to the boiling rice starch and allow boiling. Add salt to taste.
  • Switch off the heat once boiled well.
  • Set aside until it is cooled a bit, lukewarm to warm is fine.
  • Now add buttermilk, garnish with chopped fresh coriander.
  • Serve this delicious, healthy rasam with hot rice or drink as it is.

Notes:

  • This can be made with boiled/kuchilu ganji or white rice starch.
  • If using white rice, cook rice in a open vessel than pressure cooker adding more water (1:4, rice: water)
