I hope you are all doing well and enjoying the season. It has been quite some time since my last blog post, as personal and professional commitments kept me occupied. I'm happy to be back and share a simple yet delightful recipe with you today.
Growing up in Coastal Karnataka, Aamras was not something I had seen or tasted at home. Mangoes were always a big part of our summers, but we mostly enjoyed them as they were or used them in traditional coastal recipes. Recently, I came across Aamras, a popular mango delicacy from Maharashtra and Gujarat, and decided to make it for the first time.
I was surprised by how simple it was to prepare and how delicious it tasted. The creamy texture, natural sweetness of ripe mangoes, and subtle hint of cardamom made it incredibly refreshing. My family and I thoroughly enjoyed it, and it has quickly become one of our favorite summer treats.
Trying Aamras for the first time was a delightful experience. Even though it isn't a traditional dish from Coastal Karnataka, its simplicity and rich mango flavor won us over instantly. If you have plenty of ripe mangoes at home and want to try something different this summer, Aamras is definitely worth making.
Preparation Time
Prep Time: 40 minutes (includes 30minutes refrigeration time)
Serves: 4
Ingredients
Ripe mangoes - 3-4 medium (Alphonso, Kesar, or any juicy variety)
Sugar or grated jaggery (optional) - 4 tsp
Cardamom powder - ¼ tsp
Saffron strands (optional) - 8–10
Milk or chilled water (optional, to adjust consistency) - 2–4 tbsp, I did not add milk
Chopped pistachios or almonds for garnish - 1 tbsp
Method
- Wash the mangoes thoroughly, peel them, and remove the seeds.
- Cut the mango flesh into pieces and transfer it to a blender.
- Add cardamom powder, saffron strands, and sugar or jaggery if using.
- Blend until smooth and creamy.
- If the mixture feels too thick, add a little milk or chilled water and blend again. I used water.
- Transfer the Aamras to a serving bowl.
- Refrigerate for about 30 minutes for the best taste.
- Garnish with chopped nuts and a few saffron strands before serving.
Tips & Serving suggestions:
- Use naturally sweet, fully ripe mangoes for maximum flavor.
- Alphonso and Kesar mangoes work particularly well, but any juicy variety can be used.
- Skip the sugar if your mangoes are already sweet.
- Always serve Aamras chilled.
- Enjoy it traditionally with hot puris.
- Serve alongside chapati or phulka.
- Enjoy it as a cooling summer dessert.
- Serve in small bowls after a festive meal.
