Preparation time: 30 minutes + Refrigeration time

Serves: 4

Ingredients

½ cup small sago pearls

2 large ripe mangoes

1 cup thick coconut milk

½ cup chilled milk (optional, for a lighter consistency)

3–4 tablespoons condensed milk (optional, adjust to taste)

Sugar - as required

Ice cubes (optional)


Method:

  • Cook Sago/ tapioca pearls following your method. See the Notes, for tips to cook sago perfectly.
  • Peel and chop the mangoes.
  • Reserve a handful of cubes for garnish.
  • Blend the remaining mango pieces with coconut milk, condensed milk, and chilled milk until completely smooth. 
  • Taste the mixture and add more condensed milk if your mangoes are slightly tart. You can add Sugar if you need more sweet.
  • Fold the cooked sago gently into the mango mixture.
  • Add the reserved mango cubes.
  • Refrigerate for at least one hour.
  • Serve chilled in dessert bowls or glasses, topped with more mango cubes and a mint leaf.

Notes:

How to Cook Sago Perfectly

Many people worry about cooking sago, but it's actually very easy.

  • Bring plenty of water to a rolling boil.
  • Add the sago pearls.
  • Cook until the pearls become mostly transparent.
  • Switch off the heat, cover the pan, and let them sit for 10 minutes.
  • Drain and rinse under cold water to remove excess starch.

The pearls should look glossy and remain pleasantly chewy, not mushy.
