Happy Ganesha chaturthi dear reader!
Pachappa, is a unique & instant sweet dosa made with rice, cucumber, jaggery batter. This is a simple variation to the guliyappa or suttavu. Suttavu is cooked in a specific pan available to make paddu which takes more time to cook whereas, these dosas made in normal dosa pan/ tava. Pachappa or cucumber sweet dosa is offered to lord Ganesha as neivedhya in place of guliyappa/ suttavu if there is time limitation. This can be prepared as after school snack for kids or even can be as a delicious breakfast.

Preparation
time: 3-4 hours (Rice soaking time)
Cooking
time: 30 - 45 minutes
Serves: 6-8

Ingredients:
Dosa rice –
1.5 cups
Cucumber -
1 medium/ 2 cups of roughly chopped pieces
Grated
coconut – ¼ cup
Jaggery – ¼
cup, adjust to taste
Salt – ½ tsp,
as per taste (Original pachappa recipe does not have salt)
Ghee/ oil –
to make the dosa, preferred ghee.
Method:
- Wash and soak dosa rice for 3-4 hours.
- You need not peel the cucumber if using tender one (core can also be used). If the cucumber is matured, then peel & discard the skin & seeds too.
- Roughly chop the cucumber and set aside.
- Wash once again in clean water just before grinding & drain water.
- Take soaked rice, chopped cucumber, grated coconut, jaggery in a wet mixer jar and grind to make smooth batter.
- Add water as needed to get the batter of consistency thinner than regular dosa batter and thicker than that of neer dosa batter.
- Add salt to taste, mix well.
- Heat the iron griddle/ tava on medium flame.
- Drizzle / apply ghee on tava/ pan.
- Spread the dosa batter on hot pan.
- Cook covered until done.
- Now drizzle ghee on top and flip the dosa to cook other side.
- Remove dosa when brown spots are observed.
- Repeat until the batter is finished.
- This dosa can be served as it is, no need of any side dish.
