Being a Salad lover, I keep looking for salad options. In general, I make veg/ fruit salads more often than lentils salad. Green gram & moong dal salad is very common in Karnataka meals which is also known as kosambri here. Look for some of my salad recipes here

Today, I am
sharing a protein rich easy Rajma/ kidney beans salad which you can assemble quickly
if you have soaked Rajma ready. You don’t need any special ingredient to make
this. We loved it, it is a filling salad which you can have as a meal!
Preparation
time: 6-8 hours (soaking time)
Cooking
time: 10 - 15 minutes
Serves: 2
Ingredients:
Kidney
beans/ Rajma – ½ cup
Onions – 1
Tomatoes –
1
Capsicum (small)-
1
Coriander
leaves – 2 tsp (finely chopped)
Green
chillis/ birds’ eye chillis – 2 (as desired), I user around 3 birds eye chillis
Salt – to taste
Vinegar/
lemon juice – 2 tsp, Vinegar gives that typical salad flavor
Method:
- Wash and soak Rajma overnight.
- Wash once again and cook with 2 glasses of water for 4-5 whistles (until tender). Allow cooling.
- Meanwhile wash and chop all the vegetables, green chillis & coriander leaves.
- Peel, wash and chop onions too.
- To make the salad, take a wide salad bowl. Drain & add cooked & cooled rajma. The water can be used while making rasam/ sambhar.
- Add the chopped vegetables, chilli & herbs. Add salt, vinegar/ lemon juice and mix everything well.
- Serve the salad fresh.
Notes:
- Optionally you can drizzle one tsp of cooking oil (preferably olive/ coconut oil).
- Sometimes Rajma cooking will take more time depending on how old the Rajma is (older, the slower it cooks).
- Any other vegetable of choice can be used.
- If you don’t have vinegar, you can use lemon juice in this salad.
