The health benefits of banana stem are proven and there is no doubt using it in regular cooking has numerous positive impacts on our health. This humble, underrated vegetable is a biproduct after harvesting banana fruit which is most of the time wasted. Only banana as fruit is consumed and neither banana stem nor the flower. It is used to some extent in our native, Coastal Karnataka homes as we grow banana in our farms. We make Banana stem palya, sasive, chutney, bajji/ fritters, juice (a wonderful remedy for kidney stones), dosa out of banana stem and banana blossom palya, chutney, pathrode, pakora, rotti… too. Banana stem/ flower are helpful in improving kidney health and the digestive system health.
Another very
useful herb used in today’s drink is lemon grass (or majjige hullu/ nimbe
hullu), yet another very healthy green. It is immunity booster and help highly
used in treating fever. It is believed to help in relieving pain.
This
delicious & flavorful drink is very refreshing and can be used as a probiotic
drink or can be served as a side dish with rice too.
Preparation
time: 15 mins
Serves: 4
Ingredients:
Banana stem
– 3 inches long
Lemon grass
– 2
Green
chilli – 1
Ginger – ½ inch
Salt – to taste
Buttermilk –
2.5 glasses
Lemon juice
– 1 tsp
Mint/
coriander – for garnishing
Method:
- Wash lemon grass & cut roughly so that it is easy to grind.
- Wash banana stem, chop & soak in water for 5 minutes.
- Wash & clean ginger, green chilli.
- Now grind all the cleaned & chopped ingredients – Banana stem, lemon grass, chilli & ginger adding water as required.
- Extract only the juice by running the ground paste and 1.5 glass of water through a sieve. Collect this herb extract in a vessel.
- Add buttermilk, salt, lemon juice and mix well.
- Serve fresh as a refreshing drink.
Notes:
- This drink can be prepared with either of banana stem or lemon grass.
- Lemon grass can be replaced with coriander, mint leaves & cumin powder too.
